Bocks
Originating in the Northern German city of Einbeck. The name ‘bock’ is a corruption of the name ‘Einbeck’ in the Bavarian dialect and became used after the beer came to Munich. The traditional Bock is made with Munich and Vienna malts and sometimes sparse amounts of roasted malts for color. Continental European hop varieties are used as well as lager yeast. Original gravity is 1.064 – 1.072 and they are hopped at 20 – 27 IBU. Complex maltiness is dominated by the rich flavors of Munich and Vienna malts. Some caramel flavors may be present due to long boil times . Hop bitterness is generally only high enough to support the malt flavor, allowing a bit of sweetness to linger in the finish.
