Lambics, Gueuze, Flanders Sours
This category includes a wide variety of ales that hold the common distinction of being fermented with wild yeast strains or including bacterial strains such as Lactobaccillus or Pediococcus. Historically Sour Ales stem from the Farmhouse brewing tradition of the Seene Valley in Brussels where wheat based ales were spontaneously fermented by the local Belgian micro biota. The broader style includes Berliner Weisse, Flanders Red Ale, Flanders Brown Ale, Lambics, and Gueuze. Characteristic sour flavors range from bright tart lemons, cherries, raspberry, and sourdough bread. Many are amazingly complex and are woven together by wild flavors and sweet and sour malt and fruit notes. Original gravity is typically between 1.040 – 1.054. Hops are generally in the background of this style buy might be detectable in small amounts.
