Pale Ales and Bitters
Built on a backbone of Pale ale, amber , or crystal malts and might use some black malt for color. Hops on Brittish Pales and Bitters are UK varieties such as Kent and Fuggles. Hops on US Pale Ales and IPA’s vary but generally include west coast varietals such as Cascade, Amarillo, and Chinook. Hops are prominantly featured and deliver a citrusy, piney, and fruity flavors. Malt flavor is typically low to medium with light caramel and toasty flavors. Medium to dry finish. Crisp and refreshing. Origianl gravity ranges from 1.056 – 1.075. Hops typically range from 40 – 70 IBU but there have emerged recent examples of the style with hops well exceeding 100 IBU.
AVERY IPA 6.3% (COLORADO) 12oz $4
Golden amber color with a white head. the nose is dominated by citrus hops that invite you to dive into this American IPA. These notes carry over into each sip with grapefruit, lemon, and orange peel riding over a biscuit malt backbone. This IPA is refreshing and glides down with great ease.
LAGUNITAS IPA – AMERICAN IPA 5.7% (CALIFORNIA) 12oz $4
Cascade hops abound in this well-crafted American IPA. Light golden-copper in color with a sweet maltiness throughout, there is a slight bitterness that adds crispness to the beer and manifests itself in lemon and pine notes. Going down smooth, this also makes a fine session beer.
OSKAR BLUES DALE’S PALE ALE – AMERICAN PALE ALE 6.5% (COLORADO) 12oz $4
Amber-orange in color with a thick, foamy head, Dale’s Pale Ale has a wonderful hop aroma of Grapefruit and pine that gives it a crisp, acidic kick. The malts offer a subtle sweetness with some caramel flavors and biscuit hints. This is perhaps the most action-packed beer offered in a can.
VICTORY HOPDEVIL IPA – AMERICAN IPA (PENNSYLVANIA) 12oz $4
This copper-colored American IPA has a beige head and a lovely spicy aroma that is full of hops and has just a hint of roasted grain. The tongue is coated with a rich caramel and prominent citrus hops that leave a long-lasting bittersweet finish.
FULLER’S ESB EXTRA SPECIAL/STRONG BITTER 5.9% (ENGLAND) 11.2oz $4.50
Clear reddish-amber in color with a moderate head, Fuller’s defines the ESB style with its exercise of perfect balance. Toasted caramel and toffee hints in the grain profile, and the herbal, citrusy hop finish allows this beer to close slightly dry and smooth.
GREAT DIVIDE TITAN IPA – AMERICAN IPA 6.8% (COLORADO) 12oz $4.50
This is a big hoppy American IPA with a nice blend of malty, fruity, and hop flavors. Titan has a nice orange-yellow color and greets you almost immediately with the rich and delicious flavors of grapefruit, orange, lemon, and malt. The finish is full of hops and a faint sweetness. Quite drinkable- even for the non hop-heads.
ROGUE DEAD GUY ALE 6.5% (OREGON) 12oz $4.50
Clear amber color with almond colored head. The nose is fruity, earthy and spicy with buttery notes. Flavors are toasted biscuit malts and tropical fruits that finish strong with nice bittering hops.
DOGFISH HEAD 60 MINUTE IPA – AMERICAN IPA 6% (DELAWARE) 12oz $5
This model American IPA is golden colored, striking a perfect balance between its roasted-grain profile and its citrusy floral hops. For an IPA, the hop levels are on the low side (which is why they also make a 90 and 120 Minute IPA), which allows the grain profile shine through beautifully. It’s an excellent choice when you’re looking for a big beer that’s better behaved.
HIGHLAND KASHMIR IPA 5.6% (NORTH CAROLINA) 12oz $5
Clear golden color with a fluffy white head. A brilliant example of the style and one of Highland’s best offerings. Aromas are lemon/sprucey hops melded with malt sweetness. Flavors are bold and echo the more subtle nose. Every sip starts with a wave of malts and ends with a refreshing hop bitternss.
HIGHLAND ST.. TERESE’S PALE ALE 5.2% (NORTH CAROLINA) 12oz $5
Pale golden amber color with an almond colored head. Very nice hoppy aroma with caramel and biscuit malts adding a strong backbone. Flavors match the aromas with caramel malts and citrus hops taking center stage and giving way from time to time for toffee, orange rind, and floral hop notes.
ROGUE BRUTAL BITTER – EXTRA SPECIAL/STRONG BITTER (ESB) 6.5% (OREGON) 12oz $5
Big-time grapefruit and pine flavor dominate this ESB. Rogue has managed to stay away from an overly sweet beer, pack in a potent amount of hop flavor, and still have something that is highly drinkable (possibly even sessionable). Not as frighteningly bitter as the name might suggest, but certain to be a hit with the hopheads.
TERRAPIN RYE SQUARED – IMPERIAL IPA 8.5% (ATHENS, GEORGIA) 12oz $5
Big malts deliver a solid sweet caramel foundation for the citrus punch of the hops and the dry refreshment of the rye malt. Bold and complex yet with a smooth mellowness that comes from a careful balance of ingredients. Finishes with big hops and lingering malt sweetness. Excellent and delicious.
FLYING DOG DOUBLE DOG PALE ALE – IMPERIAL IPA 10.5% (COLORADO) 12oz $5.50
Rich amber color with a foamy tan head. This beer has a massive hop aroma with hints of orange. The taste is tangy and bold hops with toasted caramel. There are earthy, grassy notes that mix nicely with the citrus hops. Long lasting, lingering aftertaste accompanied by alcohol warmth in the finish.
SAMUEL SMITH INDIA ALE – INDIA PALE ALE 5% (ENGLAND) 12oz $5.50
Deep golden brown color. Intenly fragrant Uk hops in the nose with hints of caramel sweetness. Smooth mouth feel supports the fruity toffee malt profile and allows a showcase for the earthy hops. Very smooth and full of flavor in the tradition of the best British IPAs.
SAMUEL SMITH’S ORGANIC ALE- ENGLISH PALE ALE 5% (ENGLAND) 12oz $5.50
Golden apricot color with an off-white head. The nose is quite fruity with bread yeast notes as well as caramel, floral hops, and woody tones. The flavors are toasted malts and fruity esters with herbal English hops combining to make this a very full and complex beer. Finishes clean and fruity.

Clear golden color with a white head. very nice floral aroma with fruity hints and some malt sweetness. The strong malty backbone holds its own very nicely with the big piney hops. Nicely balanced and refreshing.
McAUSLAN ST.. AMBROISE PALE ALE 5% (CANADA) 12oz $6
Pours dark orange with a creamy head. Aromas are sweet malts, some fruits, and slight hops. Flavors are a complex blend of apples, banana, peach, and caramel with hops balancing out all of the sweeter flavors nicely. Smooth, satisfing, and refreshing.
THOMAS HOOKER HOP MEADOW IPA – AMERICAN IPA 6.5% (CONNECTICUT) 12oz $6
Dark amber color. Enormous aromas of Cascade hops primes the nose for the wonderful hop goodness to come. Flavors are as close to fresh dry hops as you will find in any beer. Caramel malts come through in the middle and finish as an encore to this extra tasty IPA.
OSKAR BLUES GORDON IPA –IMPERIAL IPA 8.7% (COLORADO) 12oz $6.50
Solidly carbonated with a bright red-orange hue and a medium-amber head, Gordon IPA is a big beer that’s also quite balanced. Hops dominate the aroma with scents of pine, lemon and grapefruit, before giving way to a viscuous caramel malt that lingers on the tongue. A satisfying departure from many other big beers, which can often be unbalanced.

Deep amber brown in color. Aromas are sweet malts, rye, chocolate, and peppery spiciness. Flavors are bold malted rye with toasted and caramel barley. Fresh citrus and piney hops mingle well with the dry rye malts and leaves the palate refreshed and ready to savor another delicious sip.

A welcome departure from the many robust English pale ales, this crisp, refreshing beer has a lighter body and slightly lower alcohol content, as well as a hoppiness that doesn’t overwhelm the earthy, fruity grain profile.

Herbal, grassy flavors abound with hints of green tea and oak in this well-crafted, organic English pale ale. Floral hops pair excellently with the many earthy flavors, weaving themselves in and out of the buttery honey-malt profile, before the beer finishes slightly bitter and refreshing.
ST. PETER’S IPA 4.9% (ENGLAND) 500ml $7.50
Amber color with an off-white head. Nose is caramel malts with fruity notes like caramelized pears with butter toffee. Some hops are apparent in the nose but much less than is common to other IPA’s. The taste is of tasted malts with herbal, floral hops that become more apparent as the beer is enjoyed.
INNIS AND GUNN – OAK AGED PALE ALE 6.6% (SCOTLAND) 11.2oz $8
Very clear amber caramel color with a white head. Oak, whiskey, and freshly fallen leaves dominate the nose. Flavors mirror the nose with additions of creamy caramel and butterscotch. Very bold and flavorful. A wonderful selection for lovers of oak aged beers.
LAGUNITAS MAXIMUS – IMPERIAL IPA 7.5% (CALIFORNIA) 22oz $8
This is not a beer for the faint of heart. With nearly twice the IBUs of other IPAs, Maximus lives up to its larger-than-life name. This is a beer with a full-bodied, deep-malt flavor and generous amounts of lemon- and grapefruit-hop flavors. Well carbonated and bold, it has a long-lingering aftertaste.
MIKKELLER ALL OTHER’S PALE – AMERICAN PALE ALE 6% (DENMARK) 500ml $9
Aromas of apricot and pineapple with biscuit malt. Bold hops are the signature of this pale ale that acts way bigger than its 6% ABV. The malt profile comes across with caramel and tropical fruits that backs well the big fresh pine hops. Flavor packed and extremely well made.
‘t SMISJE IPA+ – BELGIAN IPA 10% (BELGIUM) 11.2oz $9
Aromas are initially of fresh zested lemons and oranges with cloves and bananas being contributed by the yeast. Layers upon layers of complexity here with hops yeilding to lush pineapple, grapefruit, and spice. Finishes with crystal malts and lingering citrus spice. Tasty and quite dangerous at 10%.

Amber color with an off-white head. Aromas are an intoxicating blend of pine, spruce, juniper, and fresh red grapefruit. Flavors are as anticipated- a boquet of fresh hop flavor with a solid caramel malt backbone for support. A well crafted and delicious pale ale.
BUTTE CREEK ORGANIC REVOLUTION XI – IMPERIAL IPA 8.6% (CALIFORNIA) 22oz $14
Clear dark amber color. An explosion of wets coast hops in the aroma and in each sip. Very little bitterness comes through on the big hops due to this beers above average malt bill that offers a smooth and tasty rich caramel underpinning to what is a very tasty IPA.
STONE CALI-BELGIQUE – BELGIAN IPA 6.9% (CALIFORNIA) 22oz $14
Bold west-coast hops meet Belgian yeast in this epic beer from Stone. Strong floral hops greet you up front and yeild to a well constructed caramel and toasted malt backbone. Belgian yeast adds additional spicy characteristics with hints of fresh baked bread. Bold, complex, and tasty.
NORREBRO NORTH BRIDGE EXTREME – IMPERIAL IPA 9.5% (DENMARK) 600ml $18
Ruby amber color. Nose is fresh dry citrus hops, toffee, toasted malts and soft spiciness. Flavors are candied oranges and sweet caramel and molasses malts. Hints of green tea and spruce tips tease their way out of this amazingly complex beer.
