Pilseners and Lagers are primarily distinguished from Ales by their specific type of fermentation. Pilsener and Lager beers are bottom fermented at low temperatures while Ales are top fermented at higher temperatures. ‘Bottom’ and ‘Top’ refers to the way the different yeast strains work on the wort (unfermented beer). Lager yeast eats sugar from the bottom where Ale yeast strains eat sugars from the top of the fermenter. Lagers and Pilseners are generally made with primarily Pilsener malt and is usually hopped with German Noble hop varieties such as Hallertauer, Tettnanger, Saaz, and Spalt. Original gravities range from 1.044 – 1.050 and they are hopped at around 25 – 45 IBU. This makes for a beer that is crisp, clean, and refreshing that also prominantly features the German hop bitterness accentuated by sulfites in the water.
