Stouts are broken down into 6 primary categories: Dry Stout, Sweet Stout, Oatmeal Stout, Foreign Extra Stout, American Stout, and Russian Imperial Stout. All are black to deep mahogany brown in color with a tan to brown head. The style originally evolved from attempts to capitalize on the success of London Porters and were built with a more ‘stout’ body and strength. Originally called a ‘stout porter’ and in time eclipsing the Porter in popularity and earning it’s own unique designation. Full of Roasted malt, Black Patent, and other dark malts, and often utilizing flaked, unmalted barley for creaminess, Stouts have flavors ranging from coffee, chocolate, caramel, toffee, and rich roasted, nutty flavors. Hops range from 30 – 90 IBU and generally hover under the big malt profile. Original gravity ranges from 1.036 – 1.115 in the big Russian Imperial Stout. Massively complex and bold.
